Bizarre Bazaar

I've said before that José Andrés is currently my favorite chef on earth, and that is in no small part due to his two fantastic venues in the SLS Hotel in Beverly Hills: Tres and The Bazaar by José Andrés.  Both are excellent...but quite different in tone, decor, atmosphere, and of course food.

I love to travel, but as money and time don't always allow, I find the next best thing is to travel through food.  The Bazaar is uniquely positioned to help you do this, because the entire experience is about the experience.  It's all celebration, a circus of culinary experiment, a joyful gastronomic bazaar.

Not your everyday caprésé -- cherry tomatoes, liquid mozzarella. Yes, LIQUID mozzarella.
"Philly Cheesesteak” -- air bread, cheddar, Wagyu beef (by the way, I would kill for this).
Sautéed cauliflower “couscous” -- cauliflower purée, harissa, lemon, crispy quinoa.
American caviar -- crème fraîche, steamed buns and lemon air. (Sounds insane. Isn't.)
Bagel and lox cones with salmon roe, alongside sautéed shrimp with garlic and guindilla pepper.  Crazy good.
Oven-roasted cippolini onions with clementines, passion fruit, and pumpkin seed oil; braised Wagyu beef cheeks with California citrus.
Goat cheese-stuffed piquillo peppers.
LN2 Caipirinha 20 -- Brazilian cachaça, fresh lime and sugar frozen by using liquid nitrogen. tableside service.  I love a good science project with my meal.
The menu is mostly tapas and drinks, and geared for the adventuresome: your average Joe may not take to the foie gras & cotton candy lollipops, but foodies will want to gobble them.  You'll need to bring an open mind (and an open wallet), but if you do, you will spend several luxurious hours roaming from the dining room to the bar to the dessert/art museum.

Make sure to book a table for dessert as early as possible, separate from your main meal.  That's part of the culinary journey here and it's worth it.  I guarantee that no one else will serve you chocolate pop rocks in crystal.
